Semplice, rustica, ma intensamente saporita, \u00e8 una specialit\u00e0 ligure che affonda le sue radici nel basso Medioevo. Nata come cibo povero, si \u00e8 trasformata nel tempo in un simbolo della cucina tradizionale, amata per la sua croccantezza esterna e il suo cuore morbido e cremoso. Protagonista dei forni di Genova e dei caruggi, la farinata \u00e8 un\u2019esperienza gastronomica autentica che vale la pena di riscoprire.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Un po\u2019 di storia<\/strong><\/h3>\n\n\n\n<p>La farinata \u00e8 nata probabilmente per caso, dall\u2019incontro tra la farina di ceci e l\u2019acqua, due ingredienti antichi e facilmente reperibili. Nei secoli, ha trovato nella Liguria il suo territorio d\u2019elezione, grazie anche alla farina di ceci proveniente dai mulini di Busalla, nell\u2019entroterra genovese. Ancora oggi, viene preparata nei forni a legna e servita caldissima, magari con una spolverata di pepe nero.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Ingredienti (per una teglia grande)<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>500 g di farina di ceci<\/li>\n\n\n\n<li>1 litro e mezzo di acqua<\/li>\n\n\n\n<li>1 bicchiere di olio extravergine d&#8217;oliva<\/li>\n\n\n\n<li>Sale q.b.<\/li>\n\n\n\n<li>Pepe nero (facoltativo, per servire)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Preparazione<\/strong><\/h3>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li><strong>Preparare la pastella<\/strong>: Versare la farina di ceci in una ciotola capiente e unire lentamente l\u2019acqua, mescolando con una frusta per evitare la formazione di grumi. Aggiungere il sale e lasciare riposare per almeno 6-8 ore a temperatura ambiente.<\/li>\n\n\n\n<li><strong>Schiumare<\/strong>: Trascorso il tempo di riposo, eliminare con un mestolo la schiuma che si forma in superficie.<\/li>\n\n\n\n<li><strong>Aggiungere l\u2019olio<\/strong>: Versare il composto in una teglia ampia e bassa (meglio se in rame stagnato), precedentemente unta con parte dell\u2019olio. Aggiungere il resto dell\u2019olio sulla superficie e mescolare bene. Il liquido non deve superare 1 cm di altezza.<\/li>\n\n\n\n<li><strong>Cuocere<\/strong>: Infornare a 250-280\u00b0C, preferibilmente in forno a legna, finch\u00e9 la superficie non sar\u00e0 ben dorata e croccante. In forno domestico, cuocere nella parte pi\u00f9 bassa per circa 25-30 minuti.<\/li>\n\n\n\n<li><strong>Servire<\/strong>: Tagliare a spicchi e servire caldissima, con una generosa grattata di pepe nero se piace.<\/li>\n<\/ol>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Consigli e Varianti<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Pi\u00f9 riposo, pi\u00f9 sapore<\/strong>: Lasciare riposare la pastella anche per 12 ore per un gusto ancora pi\u00f9 rotondo.<\/li>\n\n\n\n<li><strong>Farinata aromatica<\/strong>: Prova ad aggiungere rosmarino fresco o cipolla tritata per una variante profumata.<\/li>\n\n\n\n<li><strong>Farinata in padella<\/strong>: Se non hai il forno, puoi cuocerla in padella antiaderente ben unta, con coperchio.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Da gustare con\u2026<\/strong><\/h3>\n\n\n\n<p>Perfetta da sola come street food, la farinata si abbina meravigliosamente a un bicchiere di vino bianco secco ligure, come il Vermentino.
